Ingredients
- 500g orzo pasta (لسان عصفور)
- 1 chicken breast, diced or shredded
- 1 can (or 1½ cups) cooked red beans
- ½ large carrot, grated
- 2 medium onions, finely chopped
- 2 Maggi cubes (or chicken bouillon)
- 1 tbsp butter
- 1 tbsp minced garlic
- Vegetable oil (as needed)
- Salt, black pepper, and chili flakes to taste
Instructions
- Heat oil and butter in a large pot. Add chopped onions and sauté until soft and translucent (do not brown).
- Add the orzo pasta and stir continuously until it turns a light golden color.
- Add the Maggi cubes, grated carrot, minced garlic, and chicken pieces. Stir well until the chicken changes color.
- Pour in hot water until it covers the orzo by about 1 cm. Reduce heat to low, cover, and cook until the pasta absorbs most of the water and is almost done.
- Stir in the cooked red beans. Adjust salt and spices to taste.
- Transfer the mixture to individual tagines or a large baking dish. Bake in a preheated oven using the top broiler for 5 minutes until the top is nicely golden.
- Remove from the oven and let it rest for a few minutes. Serve hot and enjoy!
