Also known as "Bird's Tongue Pasta" (لسان عصفور), this Egyptian-inspired recipe combines tender chicken, creamy orzo pasta, and flavorful red beans in a rich, spiced sauce. Ingredients

  • 500g orzo pasta (لسان عصفور)
  • 1 chicken breast, diced or shredded
  • 1 can (or 1½ cups) cooked red beans
  • ½ large carrot, grated
  • 2 medium onions, finely chopped
  • 2 Maggi cubes (or chicken bouillon)
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • Vegetable oil (as needed)
  • Salt, black pepper, and chili flakes to taste

Instructions

  1. Heat oil and butter in a large pot. Add chopped onions and sauté until soft and translucent (do not brown).
  2. Add the orzo pasta and stir continuously until it turns a light golden color.
  3. Add the Maggi cubes, grated carrot, minced garlic, and chicken pieces. Stir well until the chicken changes color.
  4. Pour in hot water until it covers the orzo by about 1 cm. Reduce heat to low, cover, and cook until the pasta absorbs most of the water and is almost done.
  5. Stir in the cooked red beans. Adjust salt and spices to taste.
  6. Transfer the mixture to individual tagines or a large baking dish. Bake in a preheated oven using the top broiler for 5 minutes until the top is nicely golden.
  7. Remove from the oven and let it rest for a few minutes. Serve hot and enjoy!
