Cheesy Egg Tagine in cast iron skillet with melted mozzarella

This quick and delicious **Cheesy Egg Tagine** is my favorite way to make eggs for breakfast or a light dinner. Made in a traditional cast iron tagine, the eggs stay perfectly creamy with a golden top, flavored with green onions and topped with melted mozzarella cheese. It’s ready in just 7 minutes!

The cast iron keeps the eggs warm for a long time, and the simple seasoning with black pepper and fresh herbs makes it incredibly tasty. This is a comforting, protein-packed dish that’s perfect for busy mornings or a cozy weekend brunch.

Ingredients

  • 5 large eggs
  • 1 medium green onion, finely chopped (including some green leaves)
  • 1 tablespoon ghee or olive oil
  • Salt to taste
  • Freshly ground black pepper
  • Grated mozzarella cheese (for topping)
  • Chopped parsley or cilantro for garnish
  • Pinch of crushed red pepper (optional)

Instructions

  1. Finely chop the green onion. Crack the eggs into a bowl, add the chopped green onion, salt, and black pepper. Gently mix with a fork — do not overbeat so the yolks and whites stay slightly separate for better texture and flavor.
  2. Place the cast iron tagine on medium heat. Add ghee or oil. Once hot and fragrant, pour in the egg mixture. Stir very gently once or twice.
  3. Reduce heat to low, cover, and let it cook for 2-3 minutes until the eggs start to set.
  4. Sprinkle grated mozzarella cheese on top, cover again, and cook for another 1-2 minutes until the cheese melts beautifully.
  5. Remove from heat. Garnish with chopped parsley or cilantro and a pinch of crushed red pepper if desired.
  6. Serve immediately while hot. The cast iron will keep it warm for a long time.
