Ingredients
- 5 large eggs
- 1 medium green onion, finely chopped (including some green leaves)
- 1 tablespoon ghee or olive oil
- Salt to taste
- Freshly ground black pepper
- Grated mozzarella cheese (for topping)
- Chopped parsley or cilantro for garnish
- Pinch of crushed red pepper (optional)
Instructions
- Finely chop the green onion. Crack the eggs into a bowl, add the chopped green onion, salt, and black pepper. Gently mix with a fork — do not overbeat so the yolks and whites stay slightly separate for better texture and flavor.
- Place the cast iron tagine on medium heat. Add ghee or oil. Once hot and fragrant, pour in the egg mixture. Stir very gently once or twice.
- Reduce heat to low, cover, and let it cook for 2-3 minutes until the eggs start to set.
- Sprinkle grated mozzarella cheese on top, cover again, and cook for another 1-2 minutes until the cheese melts beautifully.
