  • 4 tbsp olive oil
  • ½ cup water
  • 1 tsp cumin

  • Salt to taste
  • Pinch of black pepper
  • Chopped fresh coriander and parsley
  • Olives for garnish
  • Bay leaves

Instructions

  1. In a tagine pot or large pan, heat the olive oil and add the sliced onions. Cook until soft and translucent.
  2. Add the minced garlic, chopped tomatoes, bell pepper, potatoes, and all the spices (cumin, ginger, paprika, salt, and black pepper). Mix well and cook for a few minutes until the vegetables begin to soften.
